Guacamole! Ole!

How to make guacamole with a mortar and pestle. I normally just make mine with lime and sea salt, but I’m loving Ruhlman’s suggestions, like letting the salt dissolve in the lime before adding the fatty avocado, and how leaving the shallot and garlic in the acid for ten minutes will diminish their sharpness.
